VEGAN Avocado filled Fresh Spring Rolls

These Fresh Spring Rolls are ridiculously Easy to-make and Super delicious.

This dish is Kid-Friendly!  They Love the mashed avocado and the texture of Rice paper.

 VEGAN Avocado filled Fresh Spring Rolls

2 avocado (choose a couple of avocados that are soft enough for mashing)

6 cherry tomatoes

1 chopped onion

1 squeezed lemon (just the juice!)

Salt and pepper

6-10 round rice paper wrappers

Method

  1. Cut cherry tomatoes and onion into small pieces.
  2. Mash the avocado, add some fresh squeezed lemon juice and ground pepper, then add the tomatoes and onion.
  3. Rolling Time: Choose a shallow bowl that is about the same size as the round rice paper wrapper, and Fill it with tap water. Take one piece of rice paper and soak it gently in water for 10-15 seconds, then drain the paper.
  4. Place the paper on a flat &dry plate.
  5. Place the avocado filling (like a thick line) on the rice paper and wrap it.
