Vegan Banana Lychee and Rice Milk Popsicles
This recipe is my new favorite summer treat. It is super simple, the ice pops are perfect and kids LOVE it.
Recipe for 4 Ice Pops
What you’ll need
3 very ripe bananas
4 Lychees, peeled
1 tsp. date syrup
2 tsp. sugar powder
⅓ cup rice/soy/almond milk
4-6 Nana mint leaves
Method
- Blend until smooth all ingredients except the nana mint leaves using a food processor or blender.
- Place one mint leaf at the bottom of each Popsicle mold. Pour banana – rice milk mixture into the popsicle molds and place the pop’s tops or sticks at the center of the ice pop.
Freeze until completely solid.
