Vegan Banana Lychee and Rice Milk Popsicles

This recipe is my new favorite summer treat. It is super simple, the ice pops are perfect and kids LOVE it.

Vegan Banana Lychee and Rice Milk Popsicles

Recipe for 4 Ice Pops

What you’ll need

3 very ripe bananas

4 Lychees, peeled

1 tsp. date syrup

2 tsp. sugar powder

⅓ cup rice/soy/almond milk

4-6 Nana mint leaves

Method

  1. Blend until smooth all ingredients except the nana mint leaves using a food processor or blender.
  2. Place one mint leaf at the bottom of each Popsicle mold. Pour banana – rice milk mixture into the popsicle molds and place the pop’s tops or sticks at the center of the ice pop.

Freeze until completely solid.
