End of summer Fig and Oatmeal Bowl
Good morning campers! It’s still hot out, however I couldn’t help but notice that summer is almost over..! Especially for those of you across the ocean 🙂
Before we’ll kiss the warm sun, sandy beaches and juicy summer fruit goodbye (that’s not the case here in Tel-Aviv we have a long-long summer), I just had to make one last figgy dish.
Why not start your day with a smile??
End of summer Fig and Oatmeal Bowl
Recipe Serves 2
Ingredients
1 cup oatmeal
2 cup water (I used warm water because was in a hurry)
2 tsp. (or to taste) maple syrup
5-6 figs (4 for cooking, 2 for serving)
Directions
1. In a medium size sauce pan or pot, over medium-low heat, place oats and fill with 2 cups water.
2. Cut 3-4 figs into quarters and add them to oats. Let the whole thing boil once. Add maple syrup. Reduce heat a-bit so it’ll simmer for a few minutes. Continue cooking until the oats are nice and porridgy.
3. Top your bowl with some fresh figs and you’re done.
Enjoy!
