3. The recipe must be an instant classic. The kind of recipes that are the obvious choice whenever you want something sweet

This recipe is all these things! A chocolaty yummy fun to make chocolate cake.

I wrote this recipe after trying countless versions, methods and recipes that were ok and even tasty but not quite what I was had in mind. As far as I’m concern – a terrific vegan chocolate cake recipe is a friend for life :p

Feel free to get creative and playful with this recipe, add chopped walnuts, white chocolate chips, dried cranberries and whatever you like.

This recipe also suits all you lazy vegans of the world! I usually make the cake right in the baking pan. No dirty dishes. Hooray!

Epic Vegan Chocolate Cake with Peanut butter and Cookie Crumbs

Ingredients:

Chocolate cake

Cake Ingredients

1¼ cups flour
1 cup cane sugar or “soft” brown sugar
⅔ cup unsweetened cocoa powder
1 tsp. baking soda
½ tsp. salt
1 cup warm water

1½ tsp. distilled white or apple cider or balsamic vinegar
⅓ cup vegetable oil

*⅓ cup chocolate chips (optional)

Peanut butter – Cookie crumbs glaze
1 tbsp. peanut butter

1.2 oz. dark chocolate

1-2 tsp. vegetable oil

A dash of salt

2 vegan cookies (I used “Lotus”) – crushed and crumbed

Directions:

Preheat oven to 350f (180c).

1. Use an 8×8 (20x20cm) baking pan, mix all the dry ingredient together – flour, sugar, cocoa powder, baking soda and salt. Make sure you really blend everything.

2. Add the “wets” – water, vinegar and oil and the chocolate chips, and again mix every until the mixture is dark and chocolaty.

3. Place in oven. Bake for 30 minutes or until a toothpick comes out clean and dry.

Let the cake cool for an hour or two.

Peanut butter – Cookie crumbs glaze
1. Melting the chocolate – use one of these two methods: Bain-Marie method: Finely chop chocolate and place in a heatproof bowl that fits perfectly in a saucepan (this will stop water spraying into the chocolate). Half-fill a saucepan with water and bring to a simmer. Place the bowl on top. Stir with a metal spoon until melted. OR use the Microwave Method: Finely chop chocolate and place in a bowl. Place bowl in microwave and heat chocolate in pulses. Start with 15 seconds of heating, then stir and heat for another 10-15 sec. then stir, place in microwave again but for shorter time. Be careful not to overheat or burn the chocolate.

2. Add peanut butter, salt and oil to melted chocolate and stir.

3. Use a pastry bag or a fork and make beautiful chocolaty zebra lines on the cake. Let it cool for a minute or two, then sprinkle cookie crumbs.
