Greek Salad with Vegan “Feta” Cheese
This is one of my favorite recipes. It is super simple. keep in mind that you have to soak the tofu for a few hours before making the actual “Cheese”. Give it a try – You won’t regret it.
Greek salad
What you’ll need:
2 large cucumbers
3 tomatoes OR 10 cherry tomatoes
1 onion, sliced
A few leaves of leafs Romaine lettuce
For seasoning:
Drizzle olive oil, freshly squeezed lemon juice, 1 tbsp. za’atar and ¼ tsp. sesame seeds.
Dairy free Feta Cheese
What you’ll need:
1 pkg. (12.3 oz.) silken soft tofu
Water
2-3 tbsp. Kosher salt (don’t panic, it’s just for the soaking part)
3-4 tbsp. za’atar spice
1 tsp. sesame seeds
2-3 tbsp. olive oil
Method
- Cut the tofu into small cubes.
- Fill a medium bowl with water and salt. Make sure the water is VERY salty. Add the tofu cubes and let it sit for a few hours, then drain.
Preheat oven to 325°f
- In a small bowl combine the za’atar and sesame seeds. Add the tofu to za’atar &sesame, drizzle olive oil and mix gently.
- Place the coated tofu in a baking pan.
Bake for 30-40 minutes.
