Green Beans Hot Lemony Salad

Lemony green beans

This is a delicious and very simple vegan dish.

2 cups Fresh green beans (cut into thirds)

2 chopped garlic clove

1/2 tsp. crushed chillies

3-4 tbsp. sliced almonds

3-4 tbsp. olive oil

2 squeezed lemons

Sea salt

Boiling water (just keep the electric kettle nearby)

Method

  1. Heat olive oil in a medium pan and sauté the garlic (don’t over sauté it or it’ll be bitter). Add the beans, almonds, salt and chili peppers.
  2. Pour ¼ cup of boiled water and keep sautéing the beans. Each time the water vaporizes, add about 2 tbsp. of boiled water, make sure you do this with high heat and can hear frying sound.
  3. Once everything is soft-crunchy, add the lemon juice and stir.
