Lentil Mushroom Burgers
The Perfect Vegan version of a classic all time favorite dish.
A Juicy, Delicious and well Seasoned Burger recipe.
Lentil Mushroom Burgers
Ingredients
1 cup Green or Black lentils or Azuki beans (I used spouted ones but it’s completely optional)
Water for cooking
200 g fresh Button Mushrooms
5 Shiitake Mushrooms
2 Bay leaves (optional)
2 tbsp. Olive oil
1 small Onion, Chopped
1 Garlic clove, Crushed
2 tbsp. Soy sauce
1 tbsp. tahini
1 tbsp. Red Wine
1/2 cup (Don’t Panic) Vegetable broth or boiled water with dried mushrooms and seasoning: thyme, basil, oregano, dried cayenne pepper flakes, sweet-smoked paprika etc.
1 cup Oatmeal
Seasoning:
1/4 tsp. sweet-smoked Paprika
1/2 tsp. mix of: Basil, Oregano and Thyme
1/4 tsp. crushed dried Cayenne pepper (spicy as desired)
1/2-1 tsp. Cumin powder
Salt, Pepper
Directions
- Fill a large pot with water, add the lentils and bay leaves and cook until soft (BUT don’t let it be too mushy). Strain.
- Place mushrooms and lentils and a food-processor and mix in pulses.
- Use the cooking pot and gently fry the onion for a minute or two. Add the garlic, stir and remove from stove. Combine the lentils-mushrooms mix with the onion-garlic and add while stirring: tahini, soy sauce, vegetable broth, red wine and oats.
- Place the burger-mix in the refrigerator for about 20 minutes. Divide mixture into patties.
Grill or bake over medium heat.
