Hanukkah is here and vegan latkes are a must. Every year my grandma makes me these golden crunchy fried latkes, I know that no baked patties are exactly the same as the fried ones, BUT this vegan oven-baked version is a definite runner-up 🙂

They’re so purrrty and crispy on the outside, and soft and melty on the inside.  Luckily this holiday has so many days of feasting. Haha.

We went crazy over this non-fried latke batch, I know you will two.

Oven Baked Vegan Potato Latkes

Recipe for 15-20 pancakes

Ingredients

7 small potatoes, Peeled

1 Shallot onion

2 tbsp. Soy flour

2 tbsp. Oil

Salt, Pepper

Directions

1. Use a food-processor or a grater (shredder) and finely grate the potatoes and onion.

2. Place the shredded veggies in a strainer and extract as much moister as possible. Keep in mind that lots of liquids should extract.

Heat oven to 180c = 350f

3. Once the potato onion mixture is somewhat dry, add soy flour, oil, salt and pepper. Mix all combined elements.

4. Make little balls, than flatten them and line in a slightly greased a baking tray.

Place in oven for 12-15 minutes, then flip the latkes over and continue baking for 12-15 minutes more.
