Potato and vegetable baked patties
The Ultimate Vegan Snack!
When evening comes I sometimes just want to grab something to eat and enjoy my lazy TV time 🙂 .
These extremely easy to do patties are always my vegan solution.
We dipped these Potato and vegetable mini burgers in sweet chili sauce and it was absolutely YUMMY!
Potatoes and vegetable baked patties
What you’ll need:
17.6 oz. (½ kg) potatoes (peeled and cut into medium size chunks)
5.30 oz. (150 g) fresh broccoli florets
1 medium carrot (sliced thinly using your peeler)
3-4 tbsp. chopped parsley
1.8 oz. (50 g) sprouted lentils and Mung beans
1 tbsp. olive oil
¼ tsp. crushed Cayenne pepper
½-1 tsp. salt
Boiling water + 1 tsp. salt for cooking
- Put the potatoes in a large pot or saucepan and cover it with boiling water and some salt. After 8-10 minutes of cooking add the broccoli and continue cooking. *Note: at this point I suggest start heating the oven to 390ºf (200ºc).
- After 20-25 minutes the potatoes should be easily mashed. Remove from heat, drain the water and keep the potatoes and broccoli in the hot saucepan. Add and mix while mashing: carrot, parsley, sprouted beans, olive oil, pepper and salt.
- Place baking paper on a baking sheet. Use your hands and make small thick patties. Place the patties on the baking sheet.
Bake 30-35 minutes, then flip the patties and bake for 10 minutes.
