Quick and Easy Strawberry – Goji berry – Chocolate Chip Cupcake! Vegan Dessert!
These Cupcakes were originally made for my Mother’s Birthday. The mission was to bake Vegan Cupcakes that everyone will LOVE, not only eat but really go crazy. These Babies did the trick!! My baby niece adored them and my Grandma asked me what’s holding everything together with no-eggs??
Yay!! So I’ve decided to share the magnificent vegan recipe.

Strawberry – Goji berry – Chocolate Chip Cupcake
Ingredients:
1 cup all-propose flour
½ cup whole wheat flour
1 tbsp. baking powder
¾ cup brown sugar
½ cup almond/soy/rice milk
¼ cup soy/vegetable oil
1 cup sliced strawberries, gojiberries, chocolate chips and any good stuff you have in your kitchen
Method
Preheat oven to 350ºF
- In a large bowl whisk all the dry ingredients.
- In a medium bowl mix the almond/soy milk and oil.
- Pour the milk and oil mixture into the “dry ingredients” bowl, add the berries and mix well.
- Place cupcake liners into a cupcake pan and then fill the liners.
Bake for 20-30 minutes or until a toothpick inserted in the center comes out clean
