Vegan Chickpea Frittata

Egg-Free  Omlette

Ingredients:

  • 1/2 cup chickpea flour (mill)
  •  3/4 cup water
  • 4-6 mallow malva leaves, or a handful of torn spinach leaves – torn
  • 1 garlic clove (minced)
  • 1/2 onion (chopped)
  • 1/4 tsp. ground turmeric
  • Olive oil for sautéing
  • Optional: 1-2 tbsp. “cheese” sauce or 1 tsp. Nutritional Yeast

Method:

  1.  Mix all ingredients but the green leaves in a bowl, and then add the leaves.
  2. Heat olive oil in a pan (medium-high heat), when the oil is hot pour mixture into the pan.
  3. Cook until it’ll have a golden color, then flip over. Make sure both sides are golden-brown.

That’s it!

    Awesome! I love chickpeas! I used to love ‘Farinata’ chickpea pancake (http://en.wikipedia.org/wiki/Farinata) when I lived in Italy – I wonder if this would have a similar rich flavour…

  5. Hi Yaeli, thanks for liking my blog post. My husband also said this reminded him of farinata. We will try it. We are vegetarians for 38 years and love cooking international cuisines. I’ve thought for years we should try catering internationally-themed meals. Cultures outside of the U.S. really know how to be creative with veggies.
