Vegan Chocolate-chip mini Muffins
Who Doesn’t LOVE muffins?! They are soft and sweet, Perfect dessert and a Fancy vegan breakfast.

- 1 cup soy milk
- ¾ tsp. apple cider vinegar
- ⅔ cup flour
- ⅔ cup whole wheat flour
- 1 tsp. baking powder
- ¾ tsp. baking soda
- ½ tsp. salt
- ½-¾ cup brown sugar
- 1 tsp. pure maple syrup
- ½ cup dark chocolate chips
- ⅓ cup vegetable oil
- 1 tsp. vanilla extract
Method
(Vegan Chocolate-chip mini Muffins)
Preheat oven to 350°F (175°c)
- Mix the soy milk &vinegar, and let it sit for 5 – 10 min.
- In a large bowl Whisk together the flours, baking powder, baking soda, and salt. Once you’re done whisking, add the chocolate chips.
- In a medium bowl, mix the oil and soy milk-vinegar mixture.
- Create a small well in the dry ingredients and pour the wet ingredients (now add the vanilla extract and maple syrup) into the well. Mix well, then fill the muffin pan – fill 1/3 of each mini muffin.
- Bake for 20 – 25 minutes or until a toothpick comes out clean when inserted into the center of the mini muffin. Let it cool for about 20 minutes before frosting/eating.
