Vegan Chocolate-chip mini Muffins

  • 1 cup soy milk
  • ¾ tsp. apple cider vinegar
  • ⅔ cup flour
  • ⅔ cup whole wheat flour
  • 1 tsp. baking powder
  • ¾ tsp. baking soda
  • ½ tsp. salt
  • ½-¾ cup brown sugar
  • 1 tsp. pure maple syrup
  • ½ cup dark chocolate chips
  • ⅓ cup vegetable oil
  • 1 tsp. vanilla extract

Method

(Vegan Chocolate-chip mini Muffins)

Preheat oven to 350°F (175°c)

  1. Mix the soy milk &vinegar, and let it sit for 5 – 10 min.
  2. In a large bowl Whisk together the flours, baking powder, baking soda, and salt. Once you’re done whisking, add the chocolate chips. 
  3. In a medium bowl, mix the oil and soy milk-vinegar mixture.
  4. Create a small well in the dry ingredients and pour the wet ingredients (now add the vanilla extract and maple syrup) into the well. Mix well, then fill the muffin pan – fill 1/3 of each mini muffin.
  5. Bake for 20 – 25 minutes or until a toothpick comes out clean when inserted into the center of the mini muffin. Let it cool for about 20 minutes before frosting/eating.
