Wild rice with Mushrooms and SwissChard
Mushrooms, chard, almonds and five types of rice Hot dish. The recipe is both simple and with a rich deep flavor.
Serves 4 people
What you’ll need
1½ cups mixed rice. I used: wild, red, brown (long grain) basmati & brown rice – rinsed then soaked in water for about an hour, then drain the water out
3 tbsp. olive oil
1 red onion – cut in half then sliced
3½ tbsp. (50 g) sliced almonds
2 large portabella mushrooms – sliced
1 cup (250 g) champignon mushrooms – sliced
3-5 Swiss chard – chopped
½ cup semi dry white wine
1 tsp. dried oregano
½-1 tsp. kosher salt
½ tsp. crushed cayenne pepper
2-3 black pepper seeds – Make sure to remove them from the
3 cups boiling water
Method
- In a large saucepan heat the oil, sauté the onion and almonds for a few minutes.
- Set the heat to medium. Add rice and mushrooms – continue to sauté while stirring for 2-3 minutes. Add white wine, chard, oregano, salt, peppers and boiling water.
- Bring to a gentle simmer, and then reduce the heat a bit. Cover the saucepan with a slightly open lid (or use one that has a steaming hole).
- Cook until all water evaporates.
*Note: Before eating, remove the black pepper seeds from the bowl.
Served and eaten with tahini.
