Frozen Banana and Coconut dessert
What you’ll need:
3 very ripe bananas
5 tbsp. coconut oil (liquid)
2 tbsp. date syrup
¼ tsp. cinnamon
A dash of nutmeg
1-2 plane vegan cookies/plain sweet biscuits/ gluten free cookies , crushed
Served with pure maple syrup
Method
- Peel the bananas and place in a medium bowl. Use a fork or a potato masher and mash the bananas until smooth.
- Add the coconut oil, date syrup and spices into the mashed bananas and mix well.
- Place cupcake liners in a muffin tray and fill each liner with banana mixture. Put the tray in the freezer for 20 minutes.
- Take the tray out of the freezer and top each banana dessert with cookie crumbs. Put the tray back in the freezer. After about 2 hours it’s ready!
