Frozen Banana and Coconut dessert

What you’ll need:

3 very ripe bananas

5 tbsp. coconut oil (liquid)

2 tbsp. date syrup

¼ tsp. cinnamon

A dash of nutmeg

1-2  plane vegan cookies/plain sweet biscuits/ gluten free cookies , crushed

Served with pure maple syrup

Method

  1. Peel the bananas and place in a medium bowl. Use a fork or a potato masher and mash the bananas until smooth.
  2. Add the coconut oil, date syrup and spices into the mashed bananas and mix well.
  3. Place cupcake liners in a muffin tray and fill each liner with banana mixture. Put the tray in the freezer for 20 minutes.
  4. Take the tray out of the freezer and top each banana dessert with cookie crumbs. Put the tray back in the freezer. After about 2 hours it’s ready!
