Baked Tofu and Veggies Patties

This recipe is for Basic baked vegan patties. It can be made with lots of different vegetables such as beet, spinach, sweet potatoes, etc. This dish is simple to make and will be a delicious & satisfying addition to your sandwiches.

And a big thanks to my lovely sister-in-law for encouraging me to make patties without overthinking it. 🙂

Baked Tofu and Veggies Vegan Patties

Baked Tofu and Veggies Patties

What you’ll need

1 cup fine oats

1½ cups boiling water

2 tbsp. olive oil

2 small onions, chopped

4 grated carrots

1 grated zucchini

3 Swiss chard leaves, torn

½ cup finely chopped parsley

1 tsp. table salt

¼ tsp. pepper

¼ tsp. ground sweet paprika (optional)

10.5 oz. / 300g silken tofu, crumbled

Method

  1. Pour boiling water in a small bowl, add the oats and mix.
  2. In a large saucepan (over medium-low heat) heat olive oil, add the onion and sauté it for a few minutes.
  3. Place the grated carrots and zucchini in the saucepan, stir and cook about 10 minutes.
  4. Add parsley, Swiss chard, salt, pepper and paprika, stir and continue cooking for a few more minutes then add tofu and oats mix and stir well. Remove from heat and let it cool while you’re setting the oven to 350°f/ 180°c.
  5. Place a baking paper on a baking pan. Wet your hands or use two tablespoons and make small round-flat patties, put them on the baking paper and brush with olive oil.
  6. Place baking pan in the oven for 30-40 minutes.
