Tricolor sprouted lentils and Mung beans soup

What you’ll need:

(Tricolor sprouted lentils and Mung beans soup)

1-2 tbsp. olive oil

1 onion (chopped)

½ tsp. fresh ginger (chopped)

1 garlic clove (chopped)

2 small carrots (sliced)

0.33 pound (150 g) orange lentils

0.33 pound (150 g) sprouted lentils and mung beans – the more colors and types the better!

¼ tsp. cumin seeds

½-1 tsp. ground turmeric

Salt

Ground black pepper

1.5-1.7liter boiling water

Method

  1. Heat 1 tbsp. olive oil in a medium stock (soup) pot and sauté the onion and ginger for 2 minutes, then add the carrots and sauté for a few more minutes.
  2. Add ½ tbsp. Olive oil into the pot and then add the garlic and cumin seeds. Stir. After 1 minute pour the boiling water, add salt, pepper and ground turmeric and stir.
  3. Cook for 30-40 minute, or until whenever you feel’s right.
